One of my favorite desserts!

CREAMY PUMPKIN GINGERBREAD

1 package of gingerbread cake mix
2 small packages of vanilla instant pudding
1 and 1/3 cups of milk
1 15 oz can of pumpkin
1 1/4 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1 8 oz container of cool whip

Mix gingerbread according to directions on package. Put in a 9X13 inch greased pan and bake 20-25 minutes. In another lareg bowl mix pudding and milk. Add pumpkin and spices. Fold in cool whip. Spread over completely cooled cake. Chill for at least 2 hours before serving or overnight. When serving top with whipping cream and sprinkle cinnamon.

Oh what fun a package of pumpkin plates from the dollar store and a package of green koolaid can be at dinner time. We had slime slurpees (koolaid mixed in the blender with half water half ice) and monster meat (chicken) quesadillas.

The reason for all the new recipes. I was hosting our monthly Enrichment get together called "In the Kitchen With..." Each month a group of ladies get together at someone's home and share/sample/demonstrate a favorite recipe. We really like muffins at our house so I made muffins (perhaps a few too many muffins.) There were applesauce, lemon blueberry, cinnamon roll, carrot, bannana chocolate chip and zuchini.

LEMON BLUEBERRY MUFFINS

2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1/4 cup butter
1 1/4 cups low-fat buttermilk
1 large egg
1 tablespoon grated lemon rind
1 cup blueberries
Cooking spray
1 tablespoon fresh lemon juice
1/2 cup powdered sugar

Preheat oven to 400°. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (flour through nutmeg) in a medium bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal.

Combine buttermilk, egg, and rind; stir well with a whisk. Add to flour mixture; stir just until moist. Gently fold in blueberries.

Spoon batter into 12 muffin cups coated with cooking spray. Bake at 400° for 20 minutes or until the muffins spring back when lightly touched. Remove muffins from pans immediately, and place on a wire rack to cool.

Combine lemon juice and powdered sugar in a small bowl. Drizzle glaze evenly over cooled muffins.
